Two Collections, One Story
🏺 Heritage Collection
Authentic regional za'atar blends from across the Levant—each one capturing the terroir and traditions of Lebanese, Palestinian, Syrian, and Jordanian families. From the bright Beirut Classic to the hyssop-heavy Galilee blend, these recipes have been perfected over centuries.
🌎 Diaspora Collection
Lebanese-American fusion celebrating immigrant innovation. When Lebanese families came to America, they didn't abandon their flavors—they evolved them. Our Honey-Garlic Za'atar Heat and Maple Black Pepper blends honor that creative spirit and cross-cultural storytelling.
💛 In Memory of Antoine Toubia (1949-1996)
This collection is dedicated to Antoine Toubia, a visionary Lebanese chef who brought authentic Middle Eastern cuisine to America. Born in Beirut, Lebanon, Antoine immigrated to the United States in 1970 during the civil war, carrying with him generations of culinary wisdom and an extraordinary gift for making any dish unique, regardless of its origins.
In 1979, with just $400 and his family's unwavering support, Antoine opened The Olive Tree in Wichita, Kansas—the city's first fine dining establishment. He didn't just serve food; he "redefined the community's expectations for fine dining" and treated every employee like family. His legacy lives on through the many local restaurant owners he trained and inspired.
Antoine believed that great cooking was about more than following recipes—it was about understanding the soul of each ingredient and having the courage to make it your own. Every blend in our collection honors that philosophy: respecting tradition while embracing innovation.
Make za'atar your new salt shaker, whether you're honoring tradition or embracing bold new flavors. Every jar connects you to a story that spans continents.
